FRUIT WINE PRODUCTION
To deliver a truly memorable taste sensation requires attention to every detail in the wine making process. That's why at Rush Creek we start our wines by first carefully selecting and planting the finest variety of trees and bushes. Then we let the deep sandy loam soil and the temperate climate along Lake Erie nurture the distinctive characteristics of each fruit. When the fruit has reached an intense, fully developed flavour it's ready to be harvested and taken to our winery. At our winery, we lightly crush the harvested fruit into an "all-inclusive pulp" that is never fortified with concentrates or flavours. The all-inclusive pulp is 100$ pure fruit. I includes the skins and even the seeds of the fruit. Because of this pulp process, our wine fermentation process requires more care than squeezing grapes into wine. It requires careful filtering and testing to avoid undesired fermentations. But the result of this intense process give our wines a lingering, smooth flavour with the richest of nutrient value. Strawberries ... elderberries ... raspberries and peaches, perfectly delivered in a taste sensation that is light, balanced and delightful. |
